饲用猪油的质量与氧化稳定性评定

摘 要:本试验旨在评定热油炉火炼工艺生产的饲用猪油的质量与氧化稳定性,为其在饲料中的合理应用和贮存提供依据,也为正在拟写中的《饲料用油脂 动物油脂》国家标准的制定提供有参考价值的基础数据。采集10个不同生产批次的新鲜饲用猪油样品,测定其主要质量指标、卫生指标、脂肪酸组成及氧化稳定性。结果表明:猪油的酸价、过氧化值、碘价、皂化值、不皂化物、水分及挥发物、不溶性杂质、丙二醛、加热减重的平均值分别为0.47 mg KOH/g、0.86 mmol/kg、59.40 g/100g、189.61 mg/g、0.28%、0.097%、0.030%、0.10 mg/kg、0.17%,其中变异系数最高的为丙二醛(45.45%),最低的为皂化值(1.54%);砷(As)<0.1 mg/kg、铅(Pb)<1.0 mg/kg,铜(Cu)含量在0.02~0.91 mg/kg,矿物油、苯并(a)芘(Bap)均未检出;饲用猪油的脂肪酸组成与相对含量比较稳定,不饱和脂肪酸占总脂肪酸含量平均为62.71%;以过氧化值达到5 mmol/kg为判断标准,基于60℃条件下猪油过氧化值测定结果,预测6个批次猪油样品在20、30℃下的平均货架期分别为238、119 d。综上可知,本试验所采集的饲用猪油质量达到《食用猪油》和正在拟写的国标《饲料用油脂 动物油脂》的要求,氧化稳定性较好,贮存期较长。

Assessment of Feeding Lard Quality and Oxidative Stability

Abstract: The experiment was conducted to supply the database for application, storage of feeding lard and the drafting GB “Oil and fat for feedstuff, Animal oil and fat” standard via assessing the quality and oxidative stability of the feeding lards produced by fire-refinery process. A total of 10 batch samples of fresh feeding lard without adding antioxidant were collected, and then its quality, hygienic index, fatty acid composition and oxidative stability were determined. The results showed that the mean values of acid value, peroxide value, iodine value, saponification value, unsaponifiable matter, moisture and volatile matter, insoluble impurities, malondialdehyde, weight loss were 0.47 mg KOH/g, 0.86 mmol/kg, 59.40 g/100g, 189.61 mg/g, 0.28%, 0.097%, 0.030%, 0.10 mg/kg and 0.17%, respectively. There existed differences for the conventional quality index among the 10 batch samples, with the lowest coefficient of variation (CV) of 1.54% for saponification value and the greatest CV of 45.45% for malondialdehyde. Regarding the hygienic index, low values were observed for arsenic (As) (<0.1 mg/kg), plumbum (Pb) (<1.0 mg/kg), cuprum (Cu) content (0.02~0.91 mg/kg), and the benzo (a) pyrene (Bap) and mineral oil content were not detected. The composition and relative content of fatty acid in the lard samples were relatively stable. The total unsaturated fatty acid in feeding lard averaged 62.71%. The six tested feeding lard samples showed good oxidative stability, with averaged shelf life expectation of 238 d at 20℃ or 119 d at 30℃. In conclusion, The quality of the feeding lards in this trial meet the requirements of edible lard and the drafting GB “Oil and fat for feedstuff, Animal oil and fat” standard. Additionally, the feeding lard samples show good oxidative stability, with a long shelf life expectation.
